Obama’s financial reform bill: Wall Street breathes a “sigh of relief”

Only a very naïve individual, a political idiot, or an editor of the Nation magazine could imagine that, under these conditions, the American ruling elite would turn on its friends on Wall Street and do anything to impede their money-making, or their capacity to precipitate further and greater financial disasters.

If the big banks and financial institutions are on the verge of being “reined in,” no one is telling them about it. Naturally, Wall Street would prefer to have no regulations imposed on it at all. A close second best, however, is a set of toothless measures such as Obama’s, essentially amounting to more paperwork. Ingenious lawyers and financial experts are already figuring out the best means of navigating through and around the “tough” new regulations. We predict they will find the work relatively unchallenging.

Amid growing popular anger over BP’s disastrous response to the gulf coast oil spill, the Obama administration came to the company’s defense on Monday, while again rejecting any federal takeover of the response.

“Despite everything, the Obama administration is saying: ‘You’re doing a heck of a job Brownies!’ It’s disgusting,” said Steiner, invoking the infamous praise given by George W. Bush to his Federal Emergency Management Agency head, Michael Brown, for the government’s catastrophic response to Hurricane Katrina in 2005. “This is no different than Bush’s response to Katrina.”

There was also some spice and vanilla. The palate was soft and pleasantly light. It had blackberry and coffee, some dirt, and a slightly nutty finish.

2000 Marchesi Mazzei Chianti Classico Castello di Fonterutoli (Italy, Tuscany, Chianti, Chianti Classico) - 89 Points The nose had sweet berries and floral notes. There was also a little earth. The palate had lots of ripe berries, some spice and floral notes, and a good earthy finish.

2006 Querciabella Mongrana Maremma Toscana IGT (Italy, Tuscany, Maremma, Maremma Toscana IGT) -87 Points The nose had cherry and earth, and a little spice. The palate was soft and juicy, with cherry, spice, floral notes, and an earthy finish.

2006 Castello di Volpaia Chianti Classico (Italy, Tuscany, Chianti, Chianti Classico) - 87 Points The nose had cherry and raspberry, some floral notes, a touch of spice, and a hit of vanilla at the end. The palate was soft, and had berries and spice, lavender, and a little oak on the finish.

2007 Sanglier Cellars Syrah Kemp Vineyards (USA, California, Sonoma County) - 92 Points The nose had a massive amount of chocolate covered blackberry, some plum, and a big dose of toasted pepper at the end. The palate was juicy, with rich, dark fruit, some chocolate, and a big shot of toasted oak on the finish.

2007 Rockpile Winery (Mauritson) Zinfandel Rockpile Ridge Vineyards (USA, California, Sonoma County, Rockpile) - 90 Points A lovely nose of black currant and chocolate, some pepper, and a little earthiness. The palate had lots of dark fruit and chocolate, pepper, and a cola finish.

2008 Cliff Lede Sauvignon Blanc Napa Valley (USA, California, Napa Valley) - 89 Points The nose had grapefruit, lemon, and orange. There was also a little bit of cat pee at the end. The palate was very fruity, with loads of grapefruit, orange, and lemon. It finished with some stone and grass.

2008 Château Sainte Marie (France, Bordeaux, Entre-Deux-Mers) - 88 Points The nose had lots of wild flowers and lemon zest. There was also some stone. The palate was crisp and had a bunch of citrus. It finished with stone and some floral notes.

2008 King Estate Pinot Gris Acrobat (USA, Oregon/Washington) - 88 Points The nose was mainly fruit - pear, apple, pineapple, and citrus. It also had a small amount of stone. The palate was also very fruity, just like the nose. The only difference was the finish had some tangerine.

Flight 22007 Martinelli Zinfandel Lolita Ranch (USA, California, Sonoma County, Russian River Valley) - 92 Points The nose had black currant and herbs, pepper and strawberry, and a little meat and earth at the end. The palate was slightly bitter, with black pepper and strawberry, spice, and some earth on the finish.

2007 Marquis Philips Shiraz 9 (Australia, South Australia, Fleurieu, McLaren Vale) - 89 Points The nose had blueberry and blackberry, spice and tobacco, and some dirt at the end. The palate was soft, and had blackberry, spice, tobacco, and a very earthy finish.

2007 Louis Bernard Châteauneuf-du-Pape (France, Rhône, Southern Rhône, Châteauneuf-du-Pape) - 83 Points The nose had figs and black currant, roasted coffee beans, and vanilla. The palate was rich and thick, with black currant and vanilla, figs, and some coffee on the finish.

US Senate moves towards passage of financial “reform” bill

By an overwhelming, bipartisan vote of 93-5 Wednesday, the US Senate removed the main obstacle to the passage of the misnamed “financial reform” legislation proposed by the Obama administration.

Far more significant than the rhetorical tub-thumping against bailouts of Wall Street is the fact that the Senate is adamantly opposed to any new taxes and fees on the financial institutions that less than two years ago triggered a worldwide financial crisis and the deepest slump since the Great Depression.

2004 Renato Ratti Barolo Marcenasco (Italy, Piedmont, Langhe, Barolo) - 91 Points The nose had blackberry and stone, a little cherry and earth, an
d some cedar at the end. The palate was soft, with lots of blackberry and cedar, some cherry, and some mocha on the finish.

2008 Guidobono Barbera d'Alba (Italy, Piedmont, Alba, Barbera d'Alba) - 89 Points The nose had cherry and green vegetables, a little pepper, and some candied raspberry on the finish. The palate was very rich, with cherry, asparagus and lettuce, and a good pepper finish.

2005 Orsolani Erbaluce di Caluso La Rustia (Italy, Piedmont, Northern Piedmont, Erbaluce di Caluso) - 88 Points The nose lots of fruit. I got melon, peach, apple, and citrus. It also had some pretty nice floral notes. The palate had the same fruit and floral notes as the nose. It also had some grapefruit on the finish.

2007 Prunotto Dolcetto d'Alba 87 (Italy, Piedmont, Alba, Dolcetto d'Alba) - Points The nose had syrup covered cherries mixed with spice and earth. The palate had good acidity. It had sour cherry, spice, and a little earth on the finish.

2008 Michele Chiarlo Gavi Le Marne (Italy, Piedmont, Gavi) - 86 Points The nose had loads of peaches and flowers, with a bunch of tropical fruits underneath. The palate was crisp, and had tropical fruit and floral notes. There was a little vanilla on the finish.

2005 Giovanni Corino Barolo Vigna Giachini (Italy, Piedmont, Langhe, Barolo) - 93 Points The nose had blackberry and mushroom, earth and raspberry, nad a little vanilla at the end. The palate was a bit tannic, but it did have have good dark fruit with lots of earthy undertones.

2005 Cantina Terlan Gewürztraminer Alto Adige - Südtirol Lunare (Italy, Trentino-Alto Adige, Alto Adige, Alto Adige - Südtirol) - 90 Points The nose was creamy and had lots of exotic asian spices. It also had a lot of pineapple and mango fruit. The palate was rich, and had loads of tropical fruit mixed with spice and cream. It finished with some floral notes.

2006 Jiménez Landi Méntrida Pielago (Spain, Castilla-La Mancha, Méntrida) - 91 Points The nose had lots of game mixed with blueberry and bacon. There was also some raspberry, earth, and spice. The palate was thick and soft, and had blueberry, game, earth, spice, and a black currant finish.

2007 Bodega Numanthia Termes Toro (Spain, Castilla y León, Toro) - 91 Points A great nose of mocha, plum, cherry, spice, and milk chocolate. The palate was very rich, and had chocolate, plum, spice, and an espresso finish.

2008 Bodegas Avanthia Valdeorras Avanthia (Spain, Galicia, Valdeorras) - 90 Points The nose had peach, pear, floral notes, spice, and a little grass. The palate was rich and slightly sweet, with peach, apple, pear, spice, and a floral finish.

2005 Celler Vall Llach Priorat IDUS (Spain, Catalunya, Priorat) - 90 Points The nose had smoke, tobacco, blueberry, cherry, black currant, and some sandalwood. The palate had lots of dark fruit, some smoke and oak, and tobacco and perfume finish.

2005 Bodegas Luzon Jumilla Alma de Luzon (Spain, Murcia, Jumilla) - 90 Points The nose had black cherry and game, smoke, spice, and a bit of tar. The palate had sweet cherry mixed with smoke and tar. The finish had some spice, but it was a little hot.

2007 Marques de Valparaiso Ribera del Duero El Encinal (Spain, Castilla y León, Ribera del Duero) - 88 Points The nose had cherry, raspberry, earth, spice, and a little oak. The palate was rich, and had cedar, cherry, raspberry, spice, and an earthy finish.

2005 Bodegas Muga Rioja Reserva (Spain, La Rioja, La Rioja Alta, Rioja) - 86 Points The nose was very nice on this wine, but the palate was way too tannic. It may be too young right now. Right now the nose is really good. Earth and tobacco, plus some cherry, cedar, and raspberry. Outside of the tannins, the palate also had cherry, raspberry, cedar, and a little earth.

The attack on immigrant workers serves two interrelated purposes. Under conditions of mass joblessness and increasing poverty, singling out immigrant workers is a time-honored means of dividing the working class. At the same time it serves as a pretext for a vast expansion of the police power of the state.
Whatever the immediate impulse behind the bill in Arizona, there is a logic to the policy of the American ruling class. There are sections of the political establishment that are well aware that their policy of bank bailouts and social austerity will inevitably provoke mass social opposition. The attack on the rights of workers and the turn to authoritarian forms of rule is their response.

Goldman Sachs executives defend deceptive marketing of securities

Testifying Tuesday before a Senate investigative panel, Goldman Sachs executives defended their deceptive marketing of mortgage-backed securities and denied any responsibility for the global economic crisis.
These actions, which helped precipitate the global financial collapse, have led to the loss of jobs, homes, and life savings, and resulted in untold misery for masses of people. The criminal practices that transpired at Goldman Sachs were not an aberration, but were repeated in banks and financial firms across the country.

Obama preaches reconciliation with coal bosses

The remarks, filled with religious and patriotic rhetoric, were aimed at concealing the criminal responsibility of the mine owners and the complicity of federal and state agencies that allowed miners to work in a deathtrap.
Obama’s remarks make clear that there will be no attempt to hold accountable those responsible for the deaths of the 29 miners, including Massey Energy and its CEO Don Blankenship. The investigation launched by the federal government will merely be another whitewash.

Flight 1

2008 Viña Cobos Cabernet Sauvignon Felino (Argentina, Mendoza) - 88 Points This wine has a lot of licorice on the nose. Mixed with that is some black fruit and espresso. The palate was very soft, with black currant and black cherry, some coffee, and a licorice finish. It was a little hot, but other than that a pretty nice wine.

2005 Tor Chardonnay Two Rivers Ranch (USA, California, Napa Valley) - 88 Points This wine had a load of lychee fruit and peaches. There was also pineapple and citrus. At the end was some honey. The palate was thick and buttery, but not too much. It had the same flavor profile as the nose. Tasty, but not much going on besides fruit.

2006 Quinta do Portal Douro (Portugal, Douro) - 87 Points The nose had lots of cedar and cherry, a little pepper and roasted meat, and some rose petals at the end. The palate was very soft, with dark fruit and cedar, a little meat, and some floral notes on the finish.

2007 Ferraton Père & Fils Crozes-Hermitage La Matinière (France, Rhône, Northern Rhône, Crozes-Hermitage) - 86 Points This wine had lots of oranges and lemon zest on the nose to start. There was also some floral notes, and just the slightest hint of spice. On the palate it was thick with lots of acidity. The fruit was mainly citrus, but there were also some floral notes on the finish.

2007 Peter Lehmann Shiraz The Barossa (Australia, South Australia, Barossa) - 85 Points The nose had lots of chocolate mixed with black fruit. It had a lot of creamy oak behind the chocolate and fruit. The palate was the opposite of the nose. Lots of creamy oak followed by chocolate and fruit. The finish was very hot.

2006 Vineyard 29 Zinfandel Aida Estate (USA, California, Napa Valley, St. Helena) - 91 Points Loads of burnt wood and earth on the nose. There was also black cherry and floral notes, and some pepper and baking spice towards the end. The palate was pretty soft, with dark fruit, floral notes, pepper, spice, and a mocha finish.

2003 Tenute Silvio Nardi Brunello di Montalcino Vigneto Manachiara (Italy, Tuscany, Montalcino, Brunello di Montalcino) - 90 Points The nose had a bunch of coffee and chocolate, some black currant, and a little cherry. The palate was rich, and had chocolate and black currant, mocha, and a good cedar finish.

The palate had a lot of smoke and tar, some cherry and pepper, and a finish of raspberry and meat juice.

2003 Burge Family Grenache/Shiraz/Mourvedre Olive Hill (Australia, South Australia, Barossa, Barossa Valley) - 91 Points The nose had cedar, black currant, barnyard, cherry, oak, and some pepper. The palate had black currant, cherry, funk, pepper, and some vanilla on the finish.

As new allegations continue to emerge, it becomes clear that the pattern of evasion, obstruction and cover-up reflects the instructions of the Vatican, and specifically of the Pope. This particular Goldman Sachs shake-down operation was by no means an aberration. It was only a fairly flagrant example of the criminality that pervades the American financial and corporate elite.
CEO Lloyd Blanfein and other Goldman executives, as well as John Paulson—who was not named in the SEC indictment—are, in fact, criminals. They should be criminally prosecuted and held legally accountable for their violations of the law and their crimes against society.

NV Duval-Leroy Champagne Brut (France, Champagne) - 90 Points The nose had fresh baked bread, apples, floral notes, and some spice at the end. The palate was very juicy, with apple, yeast, citrus, floral notes, and a good spicy finish.

NV Jean Lallement Champagne Brut Grand Cru (France, Champagne, Verzenay, Champagne) - 90 Points The nose had burnt rubber and flowers, spice and berries, and some yeast at the end. The palate had quite a bit of weight for a Champagne. It had spice and earth, some apple and citrus, and a very floral finish.

NV Roederer Estate Brut Anderson Valley (USA, California, North Coast, Anderson Valley) - 89 Points The nose had nuts and pear, some spice, and just a touch of yeast. The palate was crisp and clean, with very nice acidity. It had pear, bread, spice, and a nice nutty finish.

NV Sant Sadurní d'Anoia Cava Vega Barcelona Brut Reserva (Spain, Catalunya, Cava) - 89 Points The nose had apple and bread, but it was pretty tight. There was a tiny bit of spice at the end. The palate was crisp and clean, with very good acidity. It had a bunch of apple and yeast, some spice, and nice citrus finish.

The palate was very smooth, and had blackberry and spice, burnt wood, smoke, and a finish of black currant and spice.

NV Bodegas Hidalgo Jerez-Xérès-Sherry Amontillado Viejo Pastrana (Spain, Andalucía, Jerez-Xérès-Sherry) - 95 Points The nose had caramel and chocolate, nuts, and a little raisin. The palate was extremely nutty, but also had chocolate, caramel, and a little citrus on the finish.

2005 Celler Vall Llach Priorat IDUS (Spain, Catalunya, Priorat) - 92 Points The nose had tobacco and smoke, and a lot of dark fruit. The palate had a sweetness to it, with good acid and heavy dark fruit. The tannins were a little harsh, but it had a nice chocolate flavor that brought it all together.

2004 Fernando Remírez de Ganuza Rioja (Spain, La Rioja, La Rioja Alavesa, Rioja) - 90 Points The nose had cherry, spice, mocha, and a little leather. The palate had cherry, espresso, pepper, and a good earthy finish.

2005 Bodegas Muga Rioja Gran Reserva (Spain, La Rioja, Rioja) - 89 Points The nose had cedar and tobacco, cherry, earth, and just a touch of vanilla at the end. The tannins were a little harsh, but the palate did have good fruit, some minerals, and a nice earthy finish.

2004 Château de la Gardine Châteauneuf-du-Pape (France, Rhône, Southern Rhône, Châteauneuf-du-Pape) - 90 Points
The nose had smoked meat and blackberry, coffee beans and chocolate, and some cherry towards the end. The palate was soft and juicy, with espresso and blackberry, smoke, cherry, and some dark chocolate on the finish.

2007 Domaine Raymond Usseglio & Fils Châteauneuf-du-Pape Cuvée Girard (France, Rhône, Southern Rhône, Châteauneuf-du-Pape) - 90 Points The nose had fresh herbs and smoke, cherry, and some raw meat. The palate had a lot of pepper and cherry, with small amounts of smoke, herbs, and meat juice.

2007 Duckhorn Vineyards Decoy (USA, California, Napa Valley) - 89 Points The nose had mocha and blackberry, cherry, and a hint of vanilla at the end. The palate had a good amount of acid and tannins. It mainly had fruit, with just a little chocolate on the finish.

2006 Orin Swift Papillon (USA, California, Napa Valley) - 89 Points The nose was a bit tight. There was a little strawberry and vanilla, but not much else. The palate was very rich, with strawberry, cherry, spice, and a lot of tannins on the finish.

2007 Saxum Heart Stone Vineyard (USA, California, Central Coast, Paso Robles) - 92 Points The nose had blackberry and spice, earth and forest floor, and a bit of pepper at the end. The palate was rich and thick, with blackberry and pepper, earth, and a big shot of oak at the end. This wine is way too young and tannic, but still tasty.

2006 Larkmead Vineyards Firebelle (USA, California, Napa Valley) - 89 Points The nose had cherry and coffee, chocolate and earth, and some vanilla at the end. The palate was a bit tannic, but did have cherry, earth, and a big hit of oak on the finish.

New US nuclear doctrine targets Iran, North Korea

The new Nuclear Posture Review (NPR) issued by the Pentagon Tuesday is being hailed by the Obama administration’s apologists as a step towards global nuclear disarmament. It is nothing of the kind.
The document lays out a rationale that would justify the use of nuclear weapons against a non-nuclear state for the first time since the US atomic bombing of Hiroshima and Nagasaki. Iran and North Korea are singled out as potential targets.

The New York Times fingers whistleblower WikiLeaks

The release of video footage Monday showing cold-blooded murder committed by US military forces on the streets of eastern Baghdad in July 2007 has evoked widespread outrage and horror.
The New Yorker posted a piece April 5 by Raffi Khatchadourian which points out that the operation contravened the army’s rules of engagement on at least four grounds: proportionality; positive identification of the targets as combatants; “command culture” (the helicopter crew falsified the situation on the ground, exaggerating or inventing threats, and their commander accepted their claims without question); and the firing on the wounded.

All this may be very well, but the New York Times has other concerns. Its article is headlined, rather ominously, “Iraq Video Brings Notice to a Web Site.” It might be entitled, “New York Times Fingers a Web Site.”

The nose had honey coated tropical fruits, some peach, and a little spicy citrus towards the end. The palate had a smoky, honey flavor on top of the tropical fruit and orange. The finish was somewhat spicy and had good acidity.

2007 Avignonesi Vino Nobile di Montepulciano (Italy, Tuscany, Montepulciano, Vino Nobile di Montepulciano) - 89 Points
The nose had a bunch of leather and cherry, with some spice at the end. The palate had lots of cherry with some leather, licorice, and spice on the finish.

2005 Ferraton Père & Fils Châteauneuf-du-Pape "Le Parvis" (France, Rhône, Southern Rhône, Châteauneuf-du-Pape) - 89 Points
The nose had tobacco and wet earth, plum, and some burnt wood. The palate was soft, and had plum and earth, and a good tobacco finish.

2007 Patz & Hall Pinot Noir Sonoma Coast (USA, California, Sonoma County, Sonoma Coast) - 88 Points
A really fruity nose of pomegranate, plum, and cherry. There was also some nutmeg and damp earth. The palate was the exact opposite of the nose. There was earth and upfront with cherry and plum underneath. The acid was pretty strong on the finish.

2008 Rabbit Ridge Allure de Robles (USA, California, Central Coast, Paso Robles) - 86 Points
The nose had lots of strawberry and chocolate, some cherry and earth, and a bid shot of vanilla at the end. The palate had cherry and mocha, earth, and a big shot of vanilla on the finish.

2006 W.H. Smith Pinot Noir Maritime (USA, California, Sonoma County, Sonoma Coast) - 91 Points
The nose had earthy cherry, spice, and a nice shot of herbs. The palate was soft and had a lot of cherry. It also had earth, and herbs, and a pretty good oak finish.

2007 Livio Felluga Collio Terre Alte (Italy, Friuli-Venezia Giulia, Collio) - 89 Points
The nose had apple and pear, and some stone. The palate was crisp with good acid. It had lots of apple, with a touch of pear. The finish had good minerality.

March jobs report points to protracted US downturn

The US economy gained 162,000 jobs last month, the most in three years, according to the latest figures from the Labor Department. Far from a recovery, however, the figures reveal a stagnant economy with mass long-term unemployment and a continual decline in wages.
Far from creating jobs, the Obama administration’s program is to foster an economic environment with high unemployment, low social spending, and falling wages. This is done in the direct interest of boosting the profits of corporations.

Former IAEA chief: Iraq war killed “a million innocent civilians”

The former head of the UN’s chief nuclear agency, Mohammed ElBaradei, said in an interview with the British newspaper Guardian Wednesday that those who launched the war in Iraq were responsible for killing a million innocent people and could be held accountable under international law.
This suggestion that Bush and Blair were guilty of war crimes, coming from a high-ranking former UN official, would ordinarily be considered major news. The Guardian interview was reported by the main British and French news agencies, Reuters and AFP, but the entire American corporate media gave it zero coverage. Not a single major American newspaper or television network mentioned it.

The recent visit by President Barack Obama to Afghanistan, and its subsequent coverage in the American media, have helped clarify the nature of Washington’s relationship to the Kabul regime.
What did the US president tell Karzai during their discussions Sunday night? Did he remind the Afghan leader that the American government and military had installed him in power in December 2001? Did he point to the billions of dollars in US aid that had flown into Kabul since that time, much of it ending up in the pockets of Karzai’s relatives and cronies? Did he threaten the Afghan president, or even hint that he might end up like Ngo Dinh Diem, the Vietnamese president of South Vietnam, and long-time US asset, assassinated in a CIA-organized coup in 1963?

The law that Barack Obama signed last week will be a terrible disappointment to anyone who correctly sees the medical-insurance-pharmaceutical complex as the source of the problem.

The spreading front of U.S. wars--from Afghanistan to Africa to Latin America--represents a third world war in all but name, waged for capitalism.

On the other hand, American authoritarianism, as the cultural critic Henry Giroux pointed out recently, is "more nuance, less theatrical, more cunning, less concerned with repressive modes of control than with manipulative modes of consent."

Washington ratchets up war threats against Iran

The Times reports that US intelligence agencies are revising their 2007 finding that Iran does not have an active nuclear weapons program
The article thus makes no pretense of objective reporting, but puts the Times in its favorite role, as the mouthpiece for the US military-intelligence apparatus, publishing their “disclosures”—i.e., official Washington propaganda—even while admitting that US officials have “no solid clues” and were simply speculating in the absence of actual knowledge.

2008 Stuhlmuller Vineyards Chardonnay Estate Bottled (USA, California, Sonoma County, Alexander Valley) - 89 Points The nose had beeswax and honey, peach, and some crushed rock towards the end. The palate had slight buttered popcorn taste on the front-end, but added pear and stone. It finished with a slight honey flavor.

2008 La Crema Pinot Noir Sonoma Coast (USA, California, Sonoma County, Sonoma Coast) - 88 Points The nose had a heavy dose of cherry, plus some earth, raspberry, and floral notes. The palate was soft, with sour cherry, forest floor, and a tobacco finish.

2009 Kim Crawford Sauvignon Blanc (New Zealand, South Island, Marlborough) - 88 Points The nose had tropical fruit and citrus, a little perfume mixed with cat pee. Crisp and clean, the palate had loads of citrus and stone. It finished with a big hit of grass.

The nose is very floral with apple and pear undertones. It also has quite a bit of spice. The palate is slightly sweet. There is lots of apple and pear fruit upfront. Underneath was some very nice spice. It finishes with some very tasty floral notes. This is my style of Chardonnay. (91 pts.)

**2005 Roberto Voerzio Dolcetto d'Alba Priavino (Italy, Piedmont, Alba, Dolcetto d'Alba)** The nose was very tight, even though I decanted it for about 5 hours. I got a little blackberry, earth, and licorice. The palate was extremely acidic. It had quite a bit of blackberry preserves, plus some licorice. It finished with a little earthiness. I tried it with food, but even a hearty beef stew couldn't save it. It was drinkable, but just barely. (79 pts.)

**2007 Carlisle Zinfandel Carlisle Vineyard (USA, California, Sonoma County, Russian River Valley)** The nose was a little tight. It may be too young. I decanted it about 5 hours. I did get some raspberry and cherry, a little chocolate, and a hint of bramble towards the end. The palate was more explosive than the nose. It had raspberry and chocolate, and a nice cherry and bramble finish. The acid and tannins were very strong, making me think it needs a few more years. Still good now, though. (91 pts.)

**2006 Wind Gap Wines Syrah (USA, California, Sonoma County, Sonoma Coast)** This wine had a really interesting nose. There was lots of soil and tar with subtle dark fruit hiding behind it. I also got very faint whiffs of flowers. The palate mirrored the nose, except that the fruit flavors were a little stronger. The mouth feel was very rich, and it had long, smoky finish. This was definitely my style of Syrah. (93 pts.)

Baby Back Ribs with Tuscan BBQ Sauce

Tonight I made Baby Back Ribs with Tuscan BBQ Sauce.

INGREDIENTS:

- 3 racks of baby back ribs
- Gray salt and freshly ground black pepper
- 1 cup honey
- 1/4 cup soy sauce
- 1/2 cup balsamic vinegar
- 1 cup ketchup
- 1/4 cup espresso
- 2 tablespoons extra virgin olive oil
- 2 tablespoons minced garlic


METHOD:

1. Preheat the oven to 325 degrees F.
2. Cut each rack of ribs in half and season with salt and pepper.
3. Stack the ribs on a foil-covered baking sheet, in two piles of 3 pieces.
4. Bake in the oven about 2-1/2 hours, or until tender, rotating the ribs every 30 minutes.
5. Remove the ribs from the oven and cover them with foil to keep them moist and tender.

For the sauce:

1. In a bowl, whisk together the honey, soy sauce, vinegar, ketchup, and espresso.
2. Place the olive oil and garlic in a small sautè pan. Cook over low heat for about 1 minute, or until it turns a golden brown.
3. Remove from heat. Add to the honey mixture.
4. Place the honey mixture in a saucepan and bring to a simmer for 15 minutes to blend the flavors.

To complete the ribs:

1. Brush the BBQ sauce on both sides of the ribs, and arrange them in a single layer.
2. Place the ribs on an outdoor grill or in a 425 degree F oven.
3. Turn and baste the ribs as they cook.
4. Remove when the ribs are glazed and tender, about 15 minutes.

Chicken Fried Steak and Gravy

Tonight I made Chicken Fried Steak and Gravy for dinner.

INGREDIENTS:

- 2 lbs. beef bottom round, trimmed of excess fat
- 2 to 2 1/2 cups all-purpose flour
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- Kosher salt and freshly ground black pepper
- 3 whole eggs, beaten
- 2 cups buttermilk or whole milk
- Hot sauce, to taste
- Vegetable oil
- 3 heaping tablespoons all-purpose flour
- 1 cup buttermilk
- 1 cup whole milk
- Kosher salt and freshly ground black pepper
- Hot sauce, to taste


METHOD:

In a medium flat dish add the flour, garlic powder, onion powder, kosher salt and pepper, to taste, and combine well. In another flat dish stir together the eggs, buttermilk and hot sauce, to taste, and season well with salt and pepper, to taste. Cut beef into 4 (1/2-inch) thick slices then pound out using the teeth side of a meat mallet. This tenderizes the meat. Dredge each piece of meat in the seasoned flour, then in the seasoned buttermilk and back into the flour, allowing excess to drip off. Set out on a rack fitted over a baking sheet and allow to rest in the refrigerator for 20 to 25 minutes before cooking.

Add about 2 inches vegetable oil to a large cast iron pan and heat over medium-high heat to 365 degrees F. Once heated and working in batches, fry steaks 2 to 3 at a time until golden brown, about 3 to 4 minutes per side. Remove steaks and drain on a paper towels.

Carefully remove some the fat from the cast iron pan, reserving 1/4 cup. With the pan over medium heat, sprinkle in 3 tablespoons of flour and whisk to make a roux, scraping up any brown bits on the bottom of the pan. Once the flour has been fully incorporated slowly add the buttermilk and milk and continue to whisk until the gravy is nice and thick. Season well with salt and plenty ground black pepper, then whisk in hot sauce, to taste. Place the steaks on a serving platter, top with gravy and serve.

The palate had a lot of minerality and tannins. The dark fruit and leather was there, but I think this was way to young to drink. It has good potential, but it isn't very good right now. 94+? The palate was soft and silky, with lots of dark fruit and spice. The finish had a mix of tobacco and pencil lead that was very good. (92 pts.)

The palate was very rich and dark as well. It had chocolate, cherry, spice, and a lovely espresso finish. (92 pts.)

There was a good amount of spice along with dark fruit - mainly cherry and black currant. The palate was very ripe and concentrated. It had cedar, black cherry, and black currant. The finish was slightly bitter, but it should blow off in a couple of years. (88 pts.)

Coq–au-vin

Tonight I made Coq–au-vin.

INGREDIENTS:

- 1 bottle /1 liter plus 1 cup/225 ml of red wine
- 1 onion, cut into a 1-inch/2.5 cm dice
- 1 carrot, cut into ¼-inch/6-mm slices
- 1 celery rib, cut into ½ inch/1-cm slices
- 4 whole cloves
- 1 tbs. /14g whole black peppercorns
- 1 bouquet garni, (2 sprigs thyme, 1 sprig parsley, 1 bay leaf wrapped in cheesecloth and tied with a string )
- 1 whole chicken, about 3.5 lb/1.35 kg, “trimmed” – meaning guts, wing tips and neckbone removed
- salt and freshly ground pepper
- 1 tbs. /28g olive oil
- 6 tbs. /75g butter, softened
- 1 tbs. /14g flour
- 1/4 lb /112g slab or country bacon, cut into small oblongs (lardons) about ¼ by 1 inch/6mm by 2.5 cm
- 1/2 lb. /225 g small white button mushrooms, stems removed
- 12 pearl onions, peeled
- pinch of sugar


METHOD:

DAY ONE
The day before you even begin to cook, combine the bottle of red wine, the diced onion (that’s the big onion, not the pearl onions), sliced carrots, celery, cloves, peppercorns, and bouquet garni in a large deep bowl. Add the chicken and submerge it in the liquid so that all of it is covered. Cover the bowl with plastic wrap and refrigerate overnight.

DAY TWO
Remove the chicken from the marinade and pat it dry. Put it aside. Strain the marinade through the fine strainer, reserving the liquids and solids separately. Season the chicken with salt and pepper inside and out. In the large Dutch oven, heat the oil and 2 tablespoons/28 g of the butter until almost smoking, and then sear the chicken, turning it with the tongs to evenly brown it. Once browned, remove it from the pot and set it aside again. Add the reserved onions, celery, and carrot to the pot and cook over medium-high heat, stirring occasionally, until they are soft and golden brown. That should take about 10 minutes.

Sprinkle the flour over the vegetables and mix well with the wooden spoon so that the vegetables are coated. Now stir in the reserved strained marinade. Put the chicken back in the pot, along with the bouquet garni. Cook this for about 1 hour and 15 minutes over low heat.

Have a drink. You’re almost there…

While your chicken stews slowly in the pot, cook the bacon lardons in the small sauté pan over medium heat until golden brown. Remove the bacon from the pan and drain it on paper towels, making sure to keep about 1 tablespoon/14 g of fat in the pan. Saute the mushroom tops in the bacon fat until golden brown. Set them aside.

Now, in the small saucepan, combine the pearl onions, the pinch of sugar, a pinch of salt, and 2 tablespoons/28 g of butter. Add just enough water to just cover the onions; then cover the pan with the parchment paper trimmed to the same size of the pan. (I suppose you can use foil if you must.) Bring to a boil, reduce to a simmer, and cook until the water has evaporated. Keep a close eye on it. Remove the paper cover and continue to cook until the onions are golden brown. Set the onions aside and add the remaining cup/225 ml of red wine along with salt and pepper and reduce over medium-high heat until thick enough to coat the back of the spoon.

Your work is pretty much done here. One more thing and then it’s wine and kudos…

When the chicken is cooked through – meaning tender, the juice from the thigh running clear when pricked – carefully remove from the liquid, cut into quarters, and arrange on the deep serving platter. Strain the cooking liquid (again) into the reduced red wine. Now just add the bacon, mushrooms, and pearl onions, adjust the seasoning with salt and pepper, and swirl in the remaining 2 tablespoons/28 g of butter. Now pour that sauce over the chicken and dazzle your friends with your brilliance.

Amarone Osso Buco Pot Roast

I made Amarone Osso Buco Pot Roast for dinner tonight.

INGREDIENTS:

- Osso Buco:
- 1 cup all-purpose flour
- Sea salt and freshly ground black pepper
- 4 pieces veal shank for osso bucco
- Extra-virgin olive oil
- 3 tablespoons unsalted butter
- 1 onion, diced
- 1 celery stalk, diced
- 2 carrots, diced
- 1 lemon, zest peeled off in wide strips with a vegetable peeler
- 1 head garlic, cut horizontally through the middle
- 2 bay leaves
- 1/4 cup chopped fresh flat-leaf parsley
- 1 bottle Amarone wine
- 1 (14 1/2-ounce) can low-sodium beef broth
- 1 (28-ounce) can whole San Marzano tomatoes, hand-crushed


METHOD:

Put the flour in a large shallow platter and season it with a fair amount of salt and pepper. Get in the habit of always tasting your flour; once it coats the veal it is harder to adjust the seasoning. Dredge the veal shanks in the seasoned flour and then tap off the excess (extra flour will burn and make the dish off-tasting).

Heat a large Dutch oven over medium heat and hit it with a 3-count drizzle of oil. Add the butter and swirl it around the pan to melt. Sear the veal shanks, turning carefully with tongs, until all sides are a rich brown caramel color. Drizzle with a little more oil, if needed. (Do this in batches if the shanks are big and look crowded in the pot.) Remove the browned veal shanks to a side plate. There will be a lot of flavor left over in the bottom of the pot. You're going to use that to create your sauce.

Preheat the oven to 375 degrees F.

Using the same pot, saute the onion, celery, carrots, lemon zest, garlic, bay leaves, and parsley over medium heat. Cook the vegetables down until they start to get some color and develop a deep, rich aroma. Season with salt and pepper; add a little oil if needed. Nestle the veal shanks back in the pot. Pour in the wine and let it simmer down for 20 minutes, until the wine has reduced by half. Reducing is key for intense flavor. Add the beef broth and tomatoes and stir everything together. Cover the pot and put it in the oven. Braise for 1 and a 1/2 hours. Then remove the cover and continue to cook for another 30 minutes. The sauce should be thick and the veal tender and nearly falling off the bone. Remove bay leaves.

The palate was rich and fruity with a good balance between the fruit and oak. There was pear and spice, floral notes, and a good vanilla finish. (89 pts.)
